Croquembouche

Traditionally a french wedding cake, but these days Croquembouche are extremely popular for any occasion. Toffee or chocolate dipped puffs are filled with custard with whipped fresh cream folded trough then stacked into a tower. Our croquembouche cakes are presented in 3 sizes: 45 puffs, 65 puffs and 100 puffs. Loose puffs can be bought for around $2.20 each and kept separate to make up a higher quantity of people when serving. We recommend 1 puff per person for cocktail finger food or a minimum of 2 per person for a sit down formal function.
